Kimchi Recipe...with Thermomix


A friend showed me with her Thermomix on the steps to make Kimchi . Simple but time consuming Recipe :)

Funnily , I learned to make this from a Kuching person who learned it from an American!

My friend who helped me is currently operating a stall at Stutong Market Top floor food court. You can sample her cooking there. Thank you Carolyn !


The Ingredients which I got ready :

Three big long white cabbage
Two big white carrots (white radish)

150g spring onion

For the Paste :
150g ginger
Three pieces red pepper
Three pieces green pepper (capsicum)
Three pieces green apples
200g fresh chilies
Some roasted anchovies
Some cooked rice (for fermentation)
150g korean chilli powder

 
Steps:-
1. Wash the white cabbage and soak in water for 5mins
2. After that, get the salt ready and sprinkle over the layers of the white cabbage. Try not to peel it 
3. Leave the cabbage for a few hours. However, you need to turn it from time to time to ensure the parts are evenly salted. (The salt removes access water of the cabbage)
4. Meanwhile cut the white carrot into strips. After that sprinkle with salt and let it soak until the next day.




 For Kimchi Paste : either use a blender or Thermomix


Korean Chili Powder

Blend all the Ingredients (Paste)




Cooked Rice added

All nicely blended



add a little sesame seed oil to the blend process

the paste for the cabbage

Add the paste into the cabbage
Spring Onion
 
After all paste has been mixed, top with chopped spring onions
Put in fridge for about 7 days

After 7 days fermentation
Spoon into individual containers
All packed
